Method
- Pound chicken to 1/2 inch thick. Season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4 minutes per side until golden and cooked through (165°F). Transfer to a plate.
- Reduce heat to medium. Cook garlic for 30 seconds, then add broth and lemon juice, scraping up browned bits. Stir in zest and thyme.
- Return chicken and any juices to the pan. Simmer for 1 to 2 minutes, spooning sauce over the breasts.
- Slice chicken against the grain, plate with sauce, and top with parsley.
Notes
Let the chicken rest for a couple of minutes off the heat before slicing to keep the juices from running out. For the cleanest slices, use a sharp chef’s knife and cut across the grain.
