Ingredients
  

  • 4 boneless, skinless chicken breasts (about 6 oz each), pounded to even thickness
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper

Method
 

  1. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl. Place chicken in a shallow dish or bag, pour marinade over, and coat evenly. Let sit at room temperature at least 20 minutes, or refrigerate up to 4 hours.
  2. Heat a large skillet over medium-high heat. Remove chicken from marinade, letting excess drip off, and cook 5 to 6 minutes per side until golden and internal temperature reaches 165°F (74°C).
  3. Rest chicken on a cutting board 5 minutes, then slice against the grain and serve with fresh lemon juice.

Notes

For the most flavorful results, refrigerate the chicken in the marinade for a full 2 to 4 hours. The longer marinating time isn’t included in prep because it’s hands-off, and you can use that window to prep sides.
