- Heat oil in a large skillet over medium-high heat. Pat chicken dry, season both sides with salt and pepper, and pound thick ends to an even ½ inch if needed.
- Sear chicken 5 to 6 minutes per side until deeply golden and 165°F (74°C). Transfer to a plate and tent with foil.
- Reduce heat to medium, cook garlic 30 seconds, then stir in broth, lemon juice, and zest. Simmer 2 to 3 minutes. Off heat, whisk in cold butter until glossy.
- Return chicken and any juices to the skillet, spoon sauce over, and warm 1 minute over low heat. Sprinkle with parsley and serve.
Notes
If using extra-large chicken breasts, slice them horizontally into cutlets and reduce sear time to about 3 to 4 minutes per side. Let the chicken rest a few minutes off the heat before returning it to the sauce; this helps keep it juicy.
