- Stir the yogurt, olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper together. Pat the chicken dry and coat fully in the marinade; let sit 15 minutes at room temperature.
- Heat a large skillet over medium high, add a drizzle of oil, and sear the chicken without moving for 6 to 7 minutes. Flip and sear 5 to 6 minutes more, until the thickest part reads 155°F.
- Add the butter and lemon slices to the pan, tilt, and baste the chicken with the foaming butter for 1 minute.
- Rest the chicken 5 minutes, then slice against the grain and plate with the pan juices, parsley, and charred lemon slices.
Notes
If your chicken breasts are much thicker than 1 inch, butterfly them or pound them to 3/4 inch thickness so the cook time stays reliable. The butter basting step adds enough richness that you can skip a heavy sauce, but a quick squeeze of extra lemon at the table wakes everything up.
