Juicy Herb-Roasted Boneless Turkey Breast Recipe

Ingredients
  

  • 1 boneless, skin-on turkey breast (2 to 2.5 lb)
  • 3 tbsp unsalted butter, very soft
  • 3 garlic cloves, minced
  • 1 tbsp finely chopped fresh rosemary
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Method
 

  1. Mix butter, garlic, rosemary, salt, and pepper. Pat turkey dry, loosen the skin, and spread herb butter under and over the skin. Let sit 20 minutes.
  2. Heat oven to 375°F (190°C). Sear breast skin side down in an oven-safe skillet with olive oil over medium-high heat until golden, about 4 minutes per side.
  3. Roast skin side up in the skillet for 35 to 45 minutes, until a thermometer reads 160°F (71°C) in the thickest part.
  4. Rest 10 minutes, slice against the grain, and spoon pan juices over the top to serve.

Notes

The roasting time varies a little with the breast weight, so start checking temperature early. If the skin needs more crispness after resting, pop the sliced pieces skin side up under the broiler for 1 minute, watching closely so the herbs don't burn.
