- Preheat oven to 375°F (190°C). Mix butter, garlic, rosemary, thyme, lemon zest (if using), 1 tsp salt, and pepper into a paste. Loosen the skin over the breast and spread half the butter under it. Rub the remaining butter over the skin, tuck wings under, and tie with twine.
- Place the breast skin side up on a rack in a roasting pan. Roast 60 to 70 minutes, basting once halfway through, until an instant-read thermometer reads 160°F (70°C) in the thickest part.
- Move the breast to a cutting board, tent with foil, and rest 10 to 15 minutes until it reaches 165°F (74°C).
- Remove twine, cut the meat off the bone in one piece, then slice crosswise against the grain into thick slabs. Serve with pan juices spooned over.
Notes
If your turkey breast is larger than 3 pounds, use the weight table above as a guide and always go by temperature rather than the clock. The rest is non-negotiable—it keeps every last drop of juice in the meat. For a head start, rub the herb butter on the night before and refrigerate uncovered so the skin dries out and gets even crisper.
