- Whisk together the olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper in a large bowl.
- Pat the chicken thighs dry, add them to the bowl, and turn to coat evenly. Cover and refrigerate for 15 minutes to 2 hours.
- Preheat the grill to medium-high (400°F) and oil the grates. Place the thighs skin side down, close the lid, and cook 6 to 7 minutes until the skin is golden and releases easily. Flip and cook another 6 to 8 minutes, until an instant-read thermometer reads 170°F to 175°F in the thickest part.
- Transfer to a plate, rest for 5 minutes, then serve with a fresh squeeze of lemon.
Notes
If you have the time, let the chicken sit at room temperature while the grill preheats for the most even cooking. Leftover thighs are delicious cold or reheated.
