Ingredients
  

  • 4 boneless skinless chicken breasts (about 6 oz each)
  • 3 tbsp olive oil, plus more for the grates
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 brioche or ciabatta buns, split
  • 1/4 cup mayonnaise
  • 4 leaves green leaf or romaine lettuce
  • 1 large tomato, sliced into 4 rounds
  • 1/2 small red onion, thinly sliced

Method
 

  1. Pound chicken to an even 3/4-inch thickness. Whisk olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper in a bowl. Add chicken, coat well, and let sit 10 minutes at room temperature or refrigerate up to 4 hours.
  2. Heat a grill to medium-high (400°F) and oil the grates. Grill chicken 6 to 7 minutes per side until the internal temperature reaches 165°F. Let rest 3 to 4 minutes.
  3. Toast buns cut side down on the cooler edge of the grill or in a dry skillet for about 1 minute, until light golden.
  4. Spread mayo on the bottom buns, layer lettuce, tomato, red onion, and grilled chicken. Top with the other bun half and serve right away.

Notes

The 10-minute room temperature marinade time is included in the prep estimate. For deeper flavor, refrigerate the marinating chicken for up to 4 hours before grilling, which adds inactive time not counted above. If you use chicken thighs, grill them 5 to 6 minutes per side to 175°F.
