- Pound chicken to an even 3/4-inch thickness. Whisk olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper in a bowl. Add chicken, coat well, and let sit 10 minutes at room temperature or refrigerate up to 4 hours.
- Heat a grill to medium-high (400°F) and oil the grates. Grill chicken 6 to 7 minutes per side until the internal temperature reaches 165°F. Let rest 3 to 4 minutes.
- Toast buns cut side down on the cooler edge of the grill or in a dry skillet for about 1 minute, until light golden.
- Spread mayo on the bottom buns, layer lettuce, tomato, red onion, and grilled chicken. Top with the other bun half and serve right away.
Notes
The 10-minute room temperature marinade time is included in the prep estimate. For deeper flavor, refrigerate the marinating chicken for up to 4 hours before grilling, which adds inactive time not counted above. If you use chicken thighs, grill them 5 to 6 minutes per side to 175°F.
