Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 2 tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary, crushed
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley for garnish (optional)

Method
 

  1. Pat the chicken breasts dry. Mix all the dried seasonings and coat the chicken evenly.
  2. Pour the chicken broth into a 6-quart slow cooker. Lay the chicken in a single layer and drizzle with melted butter.
  3. Cover and cook on LOW for 4 hours, until the thickest part reaches 165°F.
  4. Remove the chicken, shred or slice, then return it to the broth. Serve warm with parsley.

Notes

Cook time can vary depending on the size of your chicken breasts and your slow cooker model. The safest way to tell it is done is with an instant-read thermometer; the internal temperature should hit 165°F. If your chicken needs more time, continue cooking in 15-minute increments.
