Method
- Combine the ground chicken, panko, grated onion with its juice, egg, mayo, garlic, salt, pepper, and paprika in a bowl. Mix gently just until blended.
- Divide into 4 equal portions. With damp hands, shape into ½-inch-thick patties and press an indent into the centre of each.
- Heat the oil in a skillet over medium-high. Cook the patties 5 to 6 minutes per side, until deeply golden and 165°F (74°C) in the centre.
- Toast the split buns in the hot pan for 30 to 60 seconds. Assemble the burgers with your chosen toppings and serve right away.
Notes
These patties are great for meal prep: shape them ahead and keep chilled, or cook a double batch and refrigerate for up to 3 days. Always let the cooked patties rest a minute before building the burger so the juices settle.
