- Preheat oven to 400°F (200°C). In a large bowl, whisk olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Add the chicken and toss to coat. Let sit at room temperature for 10 minutes.
- Arrange the tenderloins in a single layer on a rimmed baking sheet. Bake for 12 to 15 minutes, until an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
- Let the chicken rest on the baking sheet for 5 minutes, then slice and serve warm.
Notes
If you have time, let the coated chicken come to room temperature before baking, it helps the meat cook more evenly. The tenderloins will release a little juice on the baking sheet, that is totally normal and a good sign they stayed moist.
