Ingredients
  

  • 2 boneless sirloin steaks, about 8 oz each and 1 inch thick
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp unsalted butter, softened
  • 1 garlic clove, minced
  • 1 tbsp finely chopped fresh parsley

Method
 

  1. Pat steaks dry, rub with olive oil, then coat with salt, pepper, and garlic powder. Let sit at room temperature while the air fryer preheats.
  2. Preheat air fryer to 400°F (200°C). Place steaks in the basket and cook 8 to 12 minutes, flipping halfway, until internal temp reaches 125°F for medium-rare.
  3. Mix softened butter with garlic and parsley.
  4. Rest steaks 5 minutes, slice against the grain, and spoon herb butter on top.

Notes

The resting step is key; the temperature will rise a few degrees as it sits. For medium, pull the steak at 130 to 135°F. If you want extra crust, brush the steaks with a tiny bit more oil right before they go into the basket.
