Ingredients
  

  • 1 lb ground chicken
  • 1/4 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 2 tbsp finely grated yellow onion, with its juices
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 to 2 tbsp olive oil

Method
 

  1. In a bowl, mix ground chicken, panko, egg, grated onion, garlic, smoked paprika, salt, and pepper until just combined. Shape into four 1/2-inch-thick patties.
  2. Heat olive oil in a large skillet over medium heat. Cook patties for 4 to 5 minutes, until deeply golden on the bottom.
  3. Flip and cook another 4 to 5 minutes, until the internal temperature reaches 165°F (74°C).
  4. Toast the buns, then build the burgers with your favorite toppings and serve hot.

Notes

The mixture is soft, so damp hands make shaping easier. For extra-moist patties, avoid pressing them down with a spatula while they cook.
