Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 1 packet (1 oz) taco seasoning
  • 1 can (10 oz) diced tomatoes with green chiles, drained
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 can (16.3 oz) refrigerated flaky biscuits (8 count)
  • 1 cup crispy fried onions
  • Salt and black pepper, to taste

Method
 

  1. Preheat oven to 350°F (175°C). Brown ground beef, onion, and bell pepper in a skillet over medium-high heat, about 8 minutes; drain fat. Stir in taco seasoning and drained tomatoes; simmer 2 minutes.
  2. In a bowl, combine sour cream, mayonnaise, and 1 cup of the cheddar.
  3. Press biscuit dough into a greased 9x13-inch baking dish. Layer beef mixture, then creamy mixture, remaining cheddar, and fried onions.
  4. Bake 25-30 minutes until bubbly and golden. Let rest 5 minutes.
  5. Slice into squares and serve warm.

Notes

For extra heat, use hot diced tomatoes and green chiles. The casserole sets up best after a brief rest. Leftovers reheat well in the oven to keep the crust crisp.
