- Preheat oven to 350°F (175°C). Brown ground beef, onion, and bell pepper in a skillet over medium-high heat, about 8 minutes; drain fat. Stir in taco seasoning and drained tomatoes; simmer 2 minutes.
- In a bowl, combine sour cream, mayonnaise, and 1 cup of the cheddar.
- Press biscuit dough into a greased 9x13-inch baking dish. Layer beef mixture, then creamy mixture, remaining cheddar, and fried onions.
- Bake 25-30 minutes until bubbly and golden. Let rest 5 minutes.
- Slice into squares and serve warm.
Notes
For extra heat, use hot diced tomatoes and green chiles. The casserole sets up best after a brief rest. Leftovers reheat well in the oven to keep the crust crisp.
