Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups mashed very ripe bananas (about 3 medium)
  • 1/2 cup full-fat sour cream
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chopped pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Cream the butter and sugar until fluffy, about 2 minutes.
  2. Beat in the eggs one at a time, then the vanilla, mashed bananas, and sour cream until just combined.
  3. Whisk the flour, baking soda, and salt together. Fold into the wet batter gently until no dry streaks remain. Fold in pecans if using.
  4. Pour into a greased 9x5-inch loaf pan and scatter a few extra pecans on top if you like. Bake 55 to 65 minutes until a toothpick comes out clean.
  5. Cool in the pan 15 minutes, then turn out onto a rack to cool completely before slicing.

Notes

For the moistest crumb, use bananas that are nearly black. The loaf will keep, well-wrapped, for up to 4 days.
