Method
- Toss chicken with jerk paste and oil in a large bowl until coated. Let sit 10 minutes at room temperature.
- Meanwhile, mix mango, bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt for the salsa.
- Heat a large skillet over medium-high. Sear chicken 5 to 6 minutes per side until charred and an instant-read thermometer reads 165°F (74°C).
- Rest chicken on a cutting board 3 minutes, then slice against the grain into strips.
- Warm tortillas in a dry skillet, fill with sliced chicken and salsa, and serve with extra lime.
Notes
If using a jarred jerk paste, stir it well before measuring because the spices settle. The salsa also works beautifully spooned over grilled fish or shrimp. For a grilled version, cook the chicken over direct high heat for the same time per side.
