Jerk Chicken Marinade Recipe

Ingredients
  

  • 4 Scotch bonnet peppers, stems removed
  • 6 scallions, roughly chopped
  • 4 garlic cloves, peeled
  • 1 inch fresh ginger, peeled and sliced
  • 2 tbsp fresh thyme leaves
  • 2 tsp ground allspice
  • 1 tsp black pepper
  • 1 tsp ground cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 2 tbsp dark brown sugar, packed
  • 2 tbsp soy sauce
  • 2 tbsp white vinegar
  • 2 tbsp fresh lime juice
  • 2 tbsp vegetable oil

Method
 

  1. Put all the fresh ingredients (peppers, scallions, garlic, ginger, thyme) into a blender with the soy sauce, vinegar, lime juice, and oil. Blend on high until a coarse green purée forms, about 1 minute.
  2. Add the allspice, black pepper, cinnamon, nutmeg, and brown sugar. Blend 30 to 45 seconds more until smooth and the sugar dissolves.
  3. Scrape the marinade into an airtight jar, seal, and refrigerate until you are ready to use it.

Notes

This recipe makes about 1 cup of marinade, enough for 3 to 4 pounds of chicken. For the deepest flavor, let the blended sauce rest in the fridge for a few hours before you coat the meat.
