- Rinse the rice in a few changes of water until the water runs clear, about 2 minutes. Soak in fresh water for 15 to 20 minutes, then drain well.
- Heat the ghee in a heavy pot over medium heat. Add the cumin seeds and green chili, if using. Cook for 1 minute until the cumin sizzles and turns a shade darker.
- Add the drained rice, water, and salt. Bring to a boil, then lower the heat to low, cover tightly, and simmer for 12 to 15 minutes until the water is absorbed. Turn off the heat and let rest, covered, for 5 minutes.
- Fluff the rice gently with a fork, toss in the cilantro if using, and serve hot.
Notes
Soaking the rice for 15 to 20 minutes is not included in the prep time, but it makes a noticeable difference in texture. If you’re short on time, you can skip it; the grains just won’t be as long and separated. Water absorption varies slightly by brand, so you may need to adjust by a tablespoon or two next time.
