Ingredients
  

  • 1 cup cornflakes
  • 1/2 cup sweet red bean paste
  • 4 small mochi pieces
  • 4 large strawberries
  • 1 cup matcha ice cream
  • 1 cup whipped cream
  • 1 tsp matcha powder
  • 2 tbsp kuromitsu

Method
 

  1. Divide cornflakes and red bean paste between two tall glasses, layering the paste over the cornflakes.
  2. Slice strawberries, press some against the glass, then add 2 mochi pieces to each glass.
  3. Scoop matcha ice cream over the fruit, then top with whipped cream.
  4. Dust with matcha powder through a sieve and drizzle with kuromitsu. Serve immediately.

Notes

Serve right after you finish assembling so the cornflakes stay crunchy. Kuromitsu is a Japanese brown sugar syrup; honey or maple syrup works as a sub. This parfait is very flexible, so use whichever soft fruit you have on hand.
