Japanese Strawberry Sandwich Recipe

Ingredients
  

  • 4 slices Japanese milk bread (shokupan)
  • 1/2 cup cold heavy whipping cream
  • 1 tbsp granulated sugar
  • 4 to 5 large ripe strawberries

Method
 

  1. Whip the cold cream and sugar on medium-high until stiff, glossy peaks form, about 3–4 minutes.
  2. Hull the strawberries and trim the tops and bottoms to match the thickness of the bread slices.
  3. Spread a thick layer of cream on two bread slices, arrange strawberries diagonally, top with remaining bread, then wrap tightly in plastic wrap and chill at least 30 minutes.
  4. Unwrap, slice each sandwich diagonally with a serrated knife, and serve immediately.

Notes

The chill time is not counted in prep because the hands-on work is done. Let the sandwiches rest in the fridge for a full 30 minutes before slicing, or they will squish under the knife. If your kitchen is warm, chill the mixing bowl for 5 minutes before you whip the cream.
