Ingredients
  

  • 8 slices shokupan (Japanese milk bread)
  • 1 cup heavy cream, cold
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large strawberries, hulled
  • 2 kiwi, peeled

Method
 

  1. Whip the cold heavy cream with sugar and vanilla until stiff peaks form, about 2 to 3 minutes.
  2. Spread cream on 4 bread slices. Arrange fruit on two of them, press gently into the cream, top with more cream, and close with the remaining slices.
  3. Wrap each sandwich tightly in plastic wrap, mark the cut direction, and chill for at least 30 minutes.
  4. Unwrap, trim off the crusts with a serrated knife, and slice each sandwich in half diagonally. Serve immediately.

Notes

The 30-minute chill is not hands-on time but it is essential for getting a clean cut. For the prettiest cross-section, eat the sandwiches within an hour or two of slicing while the bread is still soft and the cream is cold.
