Ingredients
  

  • 2 Japanese cucumbers (or 1 English cucumber)
  • 1/2 tsp kosher salt
  • 1 tbsp sugar
  • 2 tbsp unseasoned rice vinegar
  • 1 tsp soy sauce
  • 1/2 tsp toasted sesame oil
  • 1 tsp toasted white sesame seeds

Method
 

  1. Thinly slice the cucumbers, toss with salt in a colander set over a bowl, and let sit for 5 to 10 minutes.
  2. Whisk together the sugar, rice vinegar, soy sauce, and sesame oil until the sugar dissolves.
  3. Squeeze excess liquid from the cucumbers, transfer to a bowl, pour over the dressing, toss to coat, and sprinkle with sesame seeds. Serve right away.

Notes

For the crispest texture, serve the salad as soon as it is dressed. If you have a few extra minutes, chilling the dressed salad for 10 minutes helps the flavors meld without softening the cucumbers too much.
