Ingredients

  • 12 oz thinly sliced beef
  • 1 medium onion (8 oz), halved and thinly sliced
  • 1 cup dashi
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 1 tbsp sake
  • Steamed short grain rice, for serving
  • Sliced scallions and beni shoga, for serving

Method

  1. Combine dashi, soy sauce, mirin, sugar, and sake in a 10 inch skillet over medium heat. Stir to dissolve the sugar, bring to a simmer, then add the onion. Cook until the onion is soft and translucent, about 5 minutes.
  2. Spread the beef in the skillet in a single layer. Cook for 1 minute undisturbed, then stir and continue cooking until the beef just loses its pink color, 2 to 3 minutes total.
  3. Spoon rice into bowls, ladle the beef and broth over the top, and finish with scallions and beni shoga. Serve immediately.

Notes

Nutrition values are for the beef topping only and do not include the rice. The beef and broth can be made a day ahead and refrigerated; reheat gently before serving.
