Japanese BBQ Sauce Recipe

Ingredients
  

  • ½ cup soy sauce
  • ¼ cup mirin
  • 3 tbsp sugar
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 tsp toasted sesame oil

Method
 

  1. Whisk the soy sauce, mirin, sugar, garlic, ginger, and sesame oil together in a small saucepan until the sugar dissolves.
  2. Set the pan over medium heat, bring to a simmer, then lower heat slightly and cook, stirring occasionally, for 5 to 7 minutes until the sauce reduces by a third and looks glossy.
  3. Remove from heat, cool a minute, then serve as a dipping sauce or brush onto grilled meat.

Notes

The sauce will thicken as it cools, so don’t over-reduce it. For a saltier punch, stick with regular soy sauce; if you prefer to dial it back, low-sodium works just fine.
