Ingredients

  • 1 small green cabbage, about 2 lbs
  • 1 medium carrot
  • 1 medium bell pepper
  • 1 small onion
  • 2 cloves garlic
  • 2 sprigs fresh thyme
  • 1 whole Scotch bonnet pepper
  • 2 tbsp unsalted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup water
  • 1 tsp all-purpose seasoning (optional)

Method

  1. Core the cabbage and slice it into thin ribbons about 1/4 inch wide. Cut the carrot into thin coins or matchsticks and slice the bell pepper and onion into similar strips.
  2. Melt the butter in a large skillet over medium heat. Add the onion and garlic and cook for about 2 minutes until soft. Stir in the thyme and the whole Scotch bonnet pepper.
  3. Add the cabbage, carrot, bell pepper, salt, black pepper, water, and the optional all-purpose seasoning. Stir, cover, reduce heat to medium-low, and steam for 10 to 12 minutes until crisp-tender, stirring once halfway.
  4. Remove and discard the thyme stems and Scotch bonnet pepper. Toss everything together, taste for seasoning, and serve hot.

Notes

If you like a saucier cabbage, add an extra 2 tablespoons of water during the steaming step. For a spicier dish, mince the Scotch bonnet pepper before adding it, but wash your hands well afterward.
