Jamaican Brown Stew Chicken Recipe

Ingredients
  

  • 3 lb chicken pieces, bone-in skin-on
  • 2 tbsp dark brown sugar
  • 2 tbsp vegetable oil
  • 1 large onion, sliced
  • 4 garlic cloves, minced
  • 1 Scotch bonnet pepper
  • 4 sprigs fresh thyme
  • 1 tsp ground allspice
  • 1 tsp grated fresh ginger
  • 3 tbsp soy sauce
  • 2 tbsp ketchup
  • 2 cups water or chicken broth
  • Salt and black pepper
  • Sliced scallion, for garnish

Method
 

  1. Heat oil in a large heavy pot over medium-high heat. Sprinkle brown sugar into the oil, let it melt, then add chicken skin-side down. Brown 5 minutes per side until deep caramel color forms. Remove chicken.
  2. Add onion to the pot and cook 3 minutes, scraping up browned bits. Stir in garlic, Scotch bonnet, thyme, allspice, and ginger. Cook 1 minute.
  3. Pour in water, soy sauce, and ketchup. Return chicken and any juices to the pot. Bring to a boil, reduce heat to low, cover, and simmer 35 to 40 minutes until chicken is tender.
  4. Remove the Scotch bonnet if desired. Season with salt and pepper. Ladle chicken and gravy over rice, top with scallion, and serve hot.

Notes

For a thicker gravy, simmer uncovered for an extra 2 to 3 minutes before serving. Let the stew rest off heat for 5 minutes so the sauce can settle.
