- Boil macaroni in salted water until just under al dente, then drain.
- Melt butter in a large skillet over medium heat. Sauté jalapeño until softened, about 3 to 4 minutes, then add garlic and cook 30 seconds.
- Whisk in flour and cook 1 minute. Slowly whisk in milk and simmer until thickened, 3 to 4 minutes. Remove from heat and stir in cheeses until smooth. Season with salt and pepper.
- Fold in pasta until coated. Serve hot topped with fresh jalapeño slices.
Notes
For a crispy top, transfer the finished mac to a baking dish, add a layer of cheese and breadcrumbs, and broil for 2 to 3 minutes until golden. The sauce thickens as it cools, so when reheating, stir in a splash of milk to loosen it back up.
