Jalapeño Cheddar Biscuits Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • ½ teaspoon kosher salt
  • ½ cup cold unsalted butter, cut into small cubes
  • 1 cup shredded sharp cheddar cheese
  • 2 fresh jalapeños, seeded and minced
  • ¾ cup cold buttermilk, plus extra for brushing
  • 2 tablespoons melted butter (optional, for brushing)

Method
 

  1. Preheat oven to 425°F and line a baking sheet. Whisk flour, baking powder, sugar, and salt. Cut in butter until pea-sized crumbs form.
  2. Stir in cheddar and jalapeños.
  3. Pour in buttermilk and stir until a shaggy dough forms.
  4. Turn out, fold a few times, pat to 1 inch, cut biscuits. Place on sheet, brush with buttermilk, bake 13 to 15 minutes until deep golden.
  5. Brush hot biscuits with melted butter and serve right away.

Notes

For the flakiest layers, use very cold butter and handle the dough gently. The biscuits are best eaten the same day but can be reheated. If you skip the jalapeños, you can still use the same recipe for classic cheddar biscuits.
