Italian Sub Sandwich Recipe

Ingredients
  

  • 2 sturdy sub rolls
  • 4 oz Genoa salami
  • 4 oz capicola, hot or sweet
  • 4 oz mortadella
  • 4 oz sharp provolone cheese, sliced
  • 1 cup shredded iceberg lettuce
  • 1 ripe tomato, thinly sliced
  • ¼ red onion, thinly sliced
  • ¼ cup jarred sliced banana peppers
  • 1 tsp dried oregano
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • Salt and freshly ground black pepper
  • 2 tbsp mayonnaise (optional)

Method
 

  1. In a jar, combine olive oil, red wine vinegar, oregano, a pinch of salt, and black pepper. Seal and shake for 30 seconds until well blended. Shake again right before using.
  2. Slice tomato and salt both sides. Soak onion slices in cold water for 5 minutes, then drain and pat dry. Shred lettuce.
  3. Split rolls. Optionally spread mayo on cut sides. Layer mortadella, capicola, salami, and provolone on the bottom half, folding each slice.
  4. Top with tomato, onion, lettuce, and banana peppers. Drizzle dressing generously, close the sandwich, and press gently for 30 seconds. Cut in half on a diagonal and serve immediately.

Notes

If making ahead, keep the dressing separate and drizzle at the last minute so the bread stays crisp. For a spicier sub, use hot capicola and add a few slices of pepperoncini.
