Italian Sausage Tortellini Soup Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb Italian sausage, casings removed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 4 cups chicken broth
  • 1 (14.5 oz) can crushed tomatoes
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 9 oz refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 2 cups fresh baby spinach
  • Salt and black pepper, to taste
  • Grated Parmesan, for serving

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Add sausage (casings removed), break up, and cook until deeply browned, 6 to 8 minutes.
  2. Reduce heat to medium, add onion and cook 4 minutes. Stir in garlic and tomato paste; cook 1 minute until fragrant.
  3. Pour in broth and crushed tomatoes, add oregano and red pepper flakes. Bring to a boil, add tortellini, and simmer for the time on the package, about 3 to 5 minutes. Season with salt and pepper.
  4. Turn heat to low and stir in heavy cream and spinach. Cook 2 minutes until spinach wilts.
  5. Ladle soup into bowls and top with grated Parmesan. Serve immediately.

Notes

For a make-ahead option, cook the tortellini separately and add it to each bowl just before serving; this prevents it from absorbing too much liquid in the fridge. If you plan to have leftovers, note that the tortellini will continue to soak up broth overnight, so add a splash of broth when reheating.
