- Preheat oven to 425°F (220°C). Toss potatoes with 2 tbsp olive oil, ½ tsp salt, and ¼ tsp pepper. Spread on a large rimmed baking sheet and roast 15 minutes.
- In the same bowl, toss sausages, peppers, and onion with remaining 1 tbsp oil, oregano, garlic powder, remaining ½ tsp salt, and ¼ tsp pepper.
- Push potatoes to one side of the pan. Lay sausages on the open side and scatter peppers and onions around them.
- Roast 25–30 minutes, flipping sausages and stirring vegetables halfway, until sausages reach 165°F (74°C) and potatoes are golden. Broil 1–2 minutes if more color is needed.
- Let sausages rest a couple of minutes, then slice and serve with parsley if using.
Notes
Let the sausages rest a couple of minutes before slicing so they stay extra juicy. If your sheet pan is on the smaller side, use two pans to keep the ingredients from crowding—you’ll get better browning that way.
