Italian Sausage Gnocchi Soup Recipe

Ingredients
  

  • 1 lb Italian sausage, casings removed
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 lb potato gnocchi
  • 2 cups packed fresh baby spinach
  • 1/4 cup heavy cream (optional)
  • Salt and black pepper
  • Grated Parmesan and fresh parsley, for serving

Method
 

  1. Heat the olive oil in a large pot over medium-high heat. Add the sausage and brown it, breaking it up, for 6 to 8 minutes.
  2. Reduce heat to medium and add the onion with a pinch of salt. Cook 5 minutes until soft, then add the garlic and cook 30 seconds.
  3. Pour in the wine, scrape up the browned bits, and let it reduce by half, about 2 minutes. Add the broth and tomatoes. Simmer 5 minutes and season with salt and pepper.
  4. Add the gnocchi to the simmering soup and cook 3 to 4 minutes, until they float and are tender.
  5. Remove from heat. Stir in the spinach and cream (if using) until the spinach wilts. Ladle into bowls and top with Parmesan and parsley. Serve right away.

Notes

If you plan to save leftovers, have a little extra chicken broth ready for reheating. The gnocchi will continue to absorb liquid overnight, and a splash of broth brings the soup right back.
