Italian Sausage Ditalini Soup Recipe

Ingredients
  

  • 1 lb Italian sausage, casings removed
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, sliced
  • 1 (15 oz) can diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 cup dried ditalini pasta
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • Kosher salt and black pepper
  • Freshly grated Parmesan cheese, for serving
  • Fresh parsley, chopped, for serving

Method
 

  1. Heat a large pot over medium-high heat. Add the sausage, break it into crumbles, and cook until browned, about 5 minutes.
  2. Reduce heat to medium. Stir in onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
  3. Pour in the diced tomatoes and chicken broth. Add basil and oregano. Scrape up browned bits, bring to a simmer, then cook uncovered for 10 minutes. Season with salt and pepper.
  4. Stir in the ditalini and simmer until tender, about 8 minutes.
  5. Ladle into bowls, top with Parmesan and parsley, and serve.

Notes

The pasta continues to soak up liquid as it sits, so if you make this ahead of time, cook the pasta on the side and stir it into each bowl. Reheat leftover soup over low heat with a splash of broth.
