- Brown sausage in a large skillet over medium-high heat until no longer pink, about 6–7 minutes. Remove to a plate, leaving fat in the pan.
- Reduce heat to medium. Sauté onion and bell pepper in the same skillet until softened, 4–5 minutes. Stir in garlic, oregano, and red pepper flakes; cook 30 seconds.
- Add rice and toast 1 minute. Stir in tomatoes and broth, scraping up browned bits. Return sausage to pan, bring to a boil, then cover and simmer on low 18–20 minutes until rice is tender.
- Remove from heat and rest covered 5 minutes. Fold in Parmesan, season with salt and pepper, and top with parsley before serving.
Notes
If your sausage releases very little fat, the olive oil gives the onion and pepper something to soften in. Any leftover rice will thicken further in the fridge, so add a splash of broth when reheating.
