- Heat olive oil in a large pot over medium heat. Add onion, carrot, celery, and a pinch of salt. Cook for 6-8 minutes until softened.
- Stir in garlic and tomato paste. Cook for 1 minute, stirring constantly.
- Add lentils, diced tomatoes with their juices, broth, bay leaf, rosemary, Parmesan rind, salt, and pepper. Bring to a boil, then reduce heat to low. Cover partially and simmer for 25-30 minutes, until lentils are tender.
- Remove bay leaf, rosemary stem, and rind. Stir in vinegar if using. Taste and adjust seasoning. Serve with parsley, grated Parmesan, and a drizzle of olive oil.
Notes
For a thicker soup, mash some lentils against the side of the pot before serving. The Parmesan rind is optional but adds rich, savory depth. Leftovers will thicken as they sit; add a splash of broth when reheating.
