- Whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper in a small bowl and set aside.
- Place the split rolls cut-side up on a sheet pan. Layer the salami, pepperoni, capicola, and ham on the bottom halves, then top each pile with 2 slices of provolone.
- Preheat the oven to 400°F (200°C) and bake the open-faced sandwiches for 8 to 10 minutes, until the cheese is melted and the bread is golden and crisp.
- Remove from the oven and immediately top with the shredded lettuce, tomato slices, red onion, and pepperoncini.
- Whisk the dressing again, drizzle it over the open sandwiches, close with the top roll halves, and serve right away.
Notes
If you want an even crunchier crust, brush the cut sides of the rolls with a little olive oil before you layer on the fillings. The dressing can be doubled without changing the balance, so make extra if you like a wetter sandwich.
