- In a medium bowl, whisk olive oil, lemon juice, garlic, Italian seasoning, salt, and pepper for about 30 seconds until emulsified.
- Place chicken in a zip-top bag or shallow dish, pour in marinade, and turn to coat. Refrigerate at least 30 minutes, or up to 4 hours.
- Preheat a grill or grill pan to medium-high (about 400°F). Remove chicken from marinade and grill for 5‑6 minutes per side, until an instant-read thermometer reads 165°F.
- Transfer chicken to a cutting board, tent with foil, and rest 5 minutes. Slice against the grain, sprinkle with parsley, and serve with lemon wedges.
Notes
The longer you marinate (up to 4 hours), the more flavor soaks in, but don’t go longer or the lemon may start to break down the meat. If you prefer crispier edges, pat the chicken dry with paper towels before grilling.
