Italian Drunken Noodles Recipe

Ingredients
  

  • 1 lb Italian sausage, hot or mild
  • 1 lb dried fettuccine or pappardelle
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 (15 oz) can crushed tomatoes
  • 1/2 cup dry red wine
  • 1/2 tsp salt
  • 1/4 cup fresh basil leaves, torn
  • 1/2 cup freshly grated Parmesan cheese

Method
 

  1. Brown the sausage in 1 tbsp olive oil over medium-high heat until deeply colored, 5–7 minutes. Transfer to a plate.
  2. Lower heat to medium, add remaining oil, garlic, and red pepper flakes. Cook 30 seconds, then pour in wine. Reduce by half, about 2 minutes, scraping up browned bits. Stir in tomatoes and salt, simmer 10 minutes.
  3. Meanwhile, boil pasta in salted water until al dente. Reserve 1 cup pasta water, then drain.
  4. Add pasta and sausage to the sauce. Toss, adding splashes of pasta water as needed. Scatter basil and Parmesan on top, toss once more, and serve hot.

Notes

If the sauce thickens too much while you wait for the pasta, loosen it with a little of the reserved pasta water. Leftovers taste even better the next day as the flavors mingle.
