Italian Chopped Salad Recipe

Ingredients
  

  • 1 head romaine lettuce, chopped
  • 1 small head radicchio, chopped
  • 1 cup cherry tomatoes, halved
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 oz Genoa salami, diced
  • 4 oz provolone cheese, diced
  • 1/2 cup sliced pepperoncini
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Whisk olive oil, red wine vinegar, oregano, garlic, salt, and pepper in a small bowl for about 30 seconds until emulsified. Set aside.
  2. In a very large bowl, combine the chopped romaine, radicchio, tomatoes, chickpeas, salami, provolone, pepperoncini, and red onion. Toss gently to mix.
  3. Pour the dressing over the salad, add the torn basil, and toss for about 30 seconds until everything is well coated. Serve immediately.

Notes

If raw onion tends to overpower for you, soak the sliced red onion in ice water for 10 minutes before draining and adding it. The dressed salad tastes best right after tossing, while the lettuce stays cold and crisp.
