- Whisk the olive oil, lemon juice, garlic, oregano, basil, thyme, salt, pepper, and red pepper flakes until emulsified.
- Pound the chicken to an even 1/2 to 3/4 inch thickness and pat dry.
- Place chicken in a bag or dish, pour in the marinade, and coat well. Marinate at room temperature for 20 to 30 minutes or refrigerate up to 2 hours.
- Grill over medium-high heat for 5 to 6 minutes per side, or bake at 400°F for 18 to 22 minutes, flipping once, until the chicken reaches 165°F.
- Rest the chicken for 5 minutes, then slice against the grain and serve with a squeeze of lemon and a pinch of flaky salt.
Notes
The chicken needs at least 30 minutes to marinate before cooking; if you’re short on time, even 20 minutes at room temperature makes a noticeable difference. Marinating longer than 2 hours can start to break down the surface too much, so set a timer if you tend to lose track.
