Italian Chicken Breasts with Tomato and Basil Recipe

Ingredients
  

  • 2 boneless, skinless chicken breasts (about 1 lb total)
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tbsp balsamic vinegar
  • Salt and black pepper
  • ¼ cup fresh basil leaves, torn

Method
 

  1. Pat the chicken dry and season with salt, pepper, and Italian seasoning. Heat oil in a skillet over medium-high. Sear chicken for 3 to 4 minutes per side until golden, then remove to a plate.
  2. Lower heat to medium. Cook the garlic for 30 seconds, then add the drained tomatoes and a pinch of salt. Scrape up browned bits and cook 3 to 4 minutes.
  3. Return chicken to the skillet with the balsamic vinegar, cover, and simmer 5 to 6 minutes until the chicken reaches 165°F (74°C). Plate, spoon sauce over, and top with fresh basil.

Notes

If your chicken breasts are thick, pound them to an even ¾-inch thickness before cooking. The balsamic vinegar can be replaced with red wine vinegar in equal measure.
