- Beat the butter and sugar on medium speed until light and fluffy, about 2 to 3 minutes.
- Mix in the egg yolks and vanilla on low until just combined, scraping the bowl well.
- Add the flour and salt, mixing on low just until a soft dough forms, about 30 to 45 seconds.
- Pipe the dough into 2-inch swirls on parchment-lined sheets, 2 inches apart, using a large star tip.
- Bake at 350°F (175°C) for 11 to 13 minutes, until the edges are lightly golden. Cool on the sheet 5 minutes, then transfer to a rack.
Notes
If the dough feels too stiff to pipe, let it rest at room temperature for 5 minutes. The baked cookies keep well at room temperature, but chocolate-dipped ones should be stored in a cool spot.
