- Preheat oven to 300°F (150°C). Season the beef with salt and pepper. Sear in 1 tbsp oil in a Dutch oven over medium-high heat until deeply browned, about 4 minutes per side.
- Lower heat to medium, add remaining oil and onion. Cook 5 minutes, then add garlic, oregano, basil, and red pepper flakes. Cook 30 seconds. Deglaze with 1/2 cup broth, scraping up browned bits.
- Return beef to pot, add remaining 1 1/2 cups broth, vinegar, and bay leaves. Bring to a simmer, cover, and braise in the oven for about 3 hours, until fork-tender.
- Remove beef and rest 10 minutes. Shred with forks, skim fat from the jus, and return beef to the pot. Adjust salt.
- Lightly toast rolls, pile on beef, spoon over a little jus, and top with giardiniera. Serve with extra jus for dipping.
Notes
If the braising liquid reduces faster than expected, top it up with a splash of broth or water so the beef stays partly submerged. The meat can be kept warm in the jus for up to an hour before serving.
