- Pat ribs dry, season with salt and pepper, and sear in the Instant Pot on sauté high for about 3 minutes per side until deeply browned. Remove to a plate.
- Add onion to the pot and cook 3 to 4 minutes until softened. Stir in garlic and tomato paste and cook 1 minute.
- Pour in wine, scrape up browned bits, and simmer until reduced by half, about 2 minutes. Add beef broth, Worcestershire, bay leaves, and thyme. Return ribs to the pot, bone side down.
- Lock lid, set to high pressure for 45 minutes, then let natural release for 15 minutes. Quick-release any remaining pressure.
- Remove ribs, skim fat if desired, and simmer the cooking liquid on sauté until slightly reduced. Stir in cornstarch slurry and cook 2 minutes until thickened. Spoon sauce over ribs and serve.
Notes
For bone-in ribs about 1.5 inches thick, 45 minutes gives fork-tender meat. If your ribs are thicker, add 5 to 10 minutes as shown in the table above. Allowing the full 15-minute natural release keeps the meat from becoming tough.
