Instant Pot Beef Short Ribs Recipe

Ingredients
  

  • 3 lbs bone-in beef short ribs, English-style
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, smashed
  • 2 tbsp tomato paste
  • 1/2 cup dry red wine
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 1 tbsp cornstarch mixed with 2 tbsp cold water

Method
 

  1. Pat ribs dry, season with salt and pepper, and sear in the Instant Pot on sauté high for about 3 minutes per side until deeply browned. Remove to a plate.
  2. Add onion to the pot and cook 3 to 4 minutes until softened. Stir in garlic and tomato paste and cook 1 minute.
  3. Pour in wine, scrape up browned bits, and simmer until reduced by half, about 2 minutes. Add beef broth, Worcestershire, bay leaves, and thyme. Return ribs to the pot, bone side down.
  4. Lock lid, set to high pressure for 45 minutes, then let natural release for 15 minutes. Quick-release any remaining pressure.
  5. Remove ribs, skim fat if desired, and simmer the cooking liquid on sauté until slightly reduced. Stir in cornstarch slurry and cook 2 minutes until thickened. Spoon sauce over ribs and serve.

Notes

For bone-in ribs about 1.5 inches thick, 45 minutes gives fork-tender meat. If your ribs are thicker, add 5 to 10 minutes as shown in the table above. Allowing the full 15-minute natural release keeps the meat from becoming tough.
