Ingredients
  

  • 1 ½ lbs boneless skinless chicken breasts
  • 1 cup BBQ sauce
  • ½ cup low-sodium chicken broth
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 tsp apple cider vinegar

Method
 

  1. Whisk BBQ sauce, chicken broth, brown sugar, smoked paprika, garlic powder, onion powder, salt, pepper, and vinegar in a bowl until smooth.
  2. Place chicken in the Instant Pot in a single layer and pour the sauce over it. Seal and pressure cook on high for 12 minutes, then let the pressure release naturally for 10 minutes before quick-releasing the rest.
  3. Shred the chicken with two forks right in the pot or in a bowl, moistening the meat with a little cooking liquid if needed.
  4. Set the pot to sauté and simmer the sauce for 3 to 5 minutes until thickened. Return the shredded chicken and toss to coat, then serve immediately.

Notes

The total time includes a 10-minute natural pressure release and a 5-minute sauce thickening step, so plan for about 25 minutes from start to finish. Use boneless thighs and 15 minutes of pressure cook time if you prefer dark meat.
