Indian Fish Fry Recipe

Ingredients
  

  • 1 lb (450g) firm white fish fillets
  • 2 tbsp ginger-garlic paste
  • 1 tbsp lemon juice
  • 1 tsp ground turmeric
  • 1 tsp red chili powder
  • 1 tsp ground coriander
  • ½ tsp ground cumin
  • ½ tsp garam masala
  • ½ tsp salt
  • 2 tbsp rice flour
  • 2 to 3 tbsp neutral oil

Method
 

  1. Combine the ginger-garlic paste, lemon juice, turmeric, chili powder, coriander, cumin, garam masala, and salt into a thick paste.
  2. Pat the fish dry, coat each piece completely with the paste, and let it rest for 10 to 15 minutes.
  3. Heat oil in a heavy skillet over medium-high. Dust the marinated fish with rice flour on both sides and fry for 3 to 4 minutes per side until deep golden and cooked through. Serve with lemon wedges.

Notes

The 10 to 15 minute rest after coating the fish is extra hands-off time that isn't included in the prep or cook count. If you're in a rush, you can fry it right away, but the crust stays put better with a short sit.
