Indian Cucumber Raita Recipe

Ingredients
  

  • 1 large cucumber (English or Persian)
  • 1 cup plain whole-milk yogurt
  • ½ tsp ground cumin
  • ¼ tsp ground coriander
  • ¼ tsp salt, plus a pinch for draining
  • 2 tbsp finely chopped fresh mint
  • Pinch chili powder or cayenne (optional)

Method
 

  1. Grate the cucumber on a box grater, toss with a pinch of salt, and drain in a strainer for 10 minutes. Squeeze out all the liquid with your hands.
  2. In a bowl, whisk the yogurt with cumin, coriander, and salt until smooth.
  3. Stir the cucumber and mint into the yogurt until evenly combined. Taste and adjust salt.
  4. Spoon into a serving bowl, top with a light sprinkle of cumin and fresh mint, and serve cold.

Notes

For the best texture, chill the raita for 30 minutes before serving. The cucumber will release a little liquid as it sits, just give it a stir. If you are making it ahead, add the cucumber no more than an hour before you plan to eat it to keep it from watering out.
