Indian Chicken Fry Recipe

Ingredients
  

  • 1 lb boneless, skinless chicken thighs, cut into 2-inch pieces
  • 1⁄4 cup plain yogurt (full-fat)
  • 1 tbsp ginger garlic paste
  • 1 tsp turmeric powder
  • 1 tsp Kashmiri red chilli powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1⁄2 tsp garam masala
  • 1⁄2 tsp salt
  • 1 tbsp cornstarch
  • 2 tbsp neutral oil
  • Lime wedges and fresh coriander leaves, to finish

Method
 

  1. Mix yogurt, ginger garlic paste, turmeric, chilli powder, coriander, cumin, garam masala, salt, and cornstarch. Coat chicken, set aside 10 minutes, and preheat a heavy skillet over medium-high heat.
  2. Add oil, then chicken in a single layer. Sear 3 minutes per side until deeply golden.
  3. Increase heat to high and toss constantly for 2 minutes until edges are charred and chicken is cooked through.
  4. Plate, scatter coriander, and squeeze lime over the hot chicken right before serving.

Notes

If you only have regular red chilli powder, start with 1⁄2 teaspoon and add more to taste, as the heat can vary widely. The chicken continues to carry over heat for a minute or two after leaving the pan, so pull it off the stove the moment the largest piece is just opaque and still very juicy inside.
