Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp fine sea salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract

Method
 

  1. Whisk flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In another bowl, whisk buttermilk, eggs, melted butter, and vanilla until smooth.
  3. Pour wet ingredients into dry and stir with a spatula just until combined; batter will be lumpy.
  4. Preheat a griddle over medium heat, lightly butter it, then scoop 1/4 cup batter per pancake. Cook 2 to 3 minutes per side until golden.
  5. Stack pancakes, top with butter, and serve with warm maple syrup.

Notes

For extra-tall pancakes, let the batter rest 5 minutes before cooking. The pancakes freeze beautifully; reheat straight from the freezer in a toaster for a quick weekday breakfast.
