- In another bowl, whisk buttermilk, eggs, melted butter, and vanilla until smooth.
- Pour wet ingredients into dry and stir with a spatula just until combined; batter will be lumpy.
- Preheat a griddle over medium heat, lightly butter it, then scoop 1/4 cup batter per pancake. Cook 2 to 3 minutes per side until golden.
- Stack pancakes, top with butter, and serve with warm maple syrup.
Notes
