Iced Sugar Cookies Recipe

Ingredients
  

  • 2 1/2 cups (312g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 cup (226g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 1 1/2 cups (180g) powdered sugar, sifted
  • 2 to 3 tbsp milk, plus more as needed
  • 1 tsp vanilla extract
  • 1 tsp light corn syrup (optional)

Method
 

  1. Beat butter and sugar in a large bowl until light and fluffy, 2 to 3 minutes. Add egg and 2 tsp vanilla, beat until smooth.
  2. Whisk flour, baking powder, and salt in a separate bowl. Gradually add to the butter mixture on low speed, mixing just until combined.
  3. Press the dough into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  4. Preheat oven to 350°F (175°C). Roll dough to 1/4 inch thick on a floured surface, cut shapes, and place on parchment-lined baking sheets.
  5. Bake 8 to 10 minutes until edges are barely golden. Cool on the sheets 5 minutes, then transfer to a wire rack to cool completely.
  6. Whisk powdered sugar, 2 tbsp milk, 1 tsp vanilla, and corn syrup until smooth. Thin with extra milk as needed, then spread over cooled cookies and let set about 30 minutes.

Notes

Chill time is not included in the prep time above; plan for at least 30 minutes of fridge time. For the clearest shapes, re-chill the cut cookies on the baking sheet for 10 minutes before baking.
